2lb Williams Ground Breakfast Sausage
- 8 tsp Spice World Easy Onion Puree
- 1/2 cup shredded cheddar cheese blend
- 8 eggs
- 16 pieces of white bread

1/4 cup Blue Plate Mayo
- 3 tbsp Dijon mustard
- the juice from 1/2 lemon
- 1 Tbsp Killer Hogs TX Rub
Sauce Ingredients
Directions
Combine all ingredients in a bowl and mix until well blended. Put in the fridge for at least one hour before enjoying. Spread evenly on each piece of bread for maximum flavor coverage.
- Cut your breakfast sausage log into four equal pieces. Set aside.
- Get your griddle heated up to med-high heat. While your grill is coming up to temp, go ahead and get the sauce* made up.
- Put the sausage balls on the hot griddle. Brown one side, flip to the other and smash the sausage so that it lays flat on the griddle.
- While it’s browning, go ahead and put 1 tsp of the Onion puree on each patty, then flip each patty over to the onion side facing down.
- Put a healthy portion of your cheese blend on each patty and move your patties over to the cooler side of your griddle while the cheese is melting.
- Put Blue Plate Mayo on the hot side and start toasting your bread. Wait until the first side is browned, and flip it over. WARNING: This part doesn’t take long so don’t walk away…
- After your toast is browned, your burgers should be done cooking and your cheese should be melted. Take these up on an extra plate, and go ahead and cook your eggs how you like them. I made mine over medium so the yolk was still a little runny.
- Now it’s time to assemble your sammiches. I started with a bottom piece of toast, spread on a big portion of the breakfast spread, put my patty on that, topped it with the over-medium egg, and put that top piece of toast on with a spread of that breakfast sauce. Enjoy!
