First, cut the chicken thighs in half or smaller pieces to wrap them in bacon. Cut your onions up into smaller pieces as well. I like to season the chicken before wrapping them to get a little more flavor on them.
Once seasoned, you can wrap the pickles, onions, and chicken with bacon and place on the skewer.
Lightly season the skewers and hit them with a little extra parmesan.
Place them on a 275-300 degree grill and cook them until the internal temp is 175.
Once you reach the correct temperature, lightly glaze them with the Garlic Parmesan sauce.
